Vegan Baked Falafel Recipe


Ingredients:

Chickpeas Soaking:

● Dried Chickpeas - 250g (8.8 oz)
● Water - 2 liters
● Baking Soda - 1 tsp

Falafel:

● Soaked Chickpeas
● Garlic - 2 cloves
● Onion - 1 medium
● Ground Coriander - 1 tsp
● Ground Cumin - 1 tsp
● Black Pepper - 1/2 tsp
● Paprika - 1 tsp
● Chopped Parsley or Cilantro - 30g (1 oz)
● Salt - 1 tsp
● Baking Soda - 1/2 tsp
● Lemon Juice - 1tbsp
● Water - 3 tbsp
● Olive Oil - for smearing

Directions:


1. Soak dried chickpeas in water with baking soda for at least 8 hours. Then drain.
2. Add the rest of the ingredients and blend until homogeneous.
3. Shape flat patties and place them onto a greased baking pan. Smear falafel with olive oil.
4. Bake for about 25 mins at 200°C (390°F)
